Barbeque Pizza

3 T barbecue sauce | 8 inch pizza base (or make your own here) | 1/4 c diced tomatoes | 3/4 c already-cooked chicken | 1/4 c bell-peppers | 1/4 c t coriander | 1/4 c basil | 1/4 smoked cheese, grated

  1. Preheat oven to 200°C (bake)
  2. Spread the sauce evenly over the pizza base
  3. Add the ingredients in the order they're listed in
  4. Bake in the oven for 8-10 minutes then remove
  5. Allow to mildly cool, cut into eight slices and serve

Choice Chicken Patties

400g chicken mince | 1 T chives | 1 t minced garlic | 1 t lemond rind | 3 T breadcrumbs | 1/4 c parmesan, finely grated | 1/4 Best Foods mayonnaise | 3 thin bacon rashers

  1. Combine all ingredients except the bacon in a medium bowl
  2. Divide the mixture into three portions and shape into 3 patties. Freeze for 30 minutes
  3. Cut each rasher crossways in half, then cut each half into 4 lengthways strips
  4. Wrap each rasher around a patty and secure with toothpicks
  5. Place on a tray lined with baking paper and cook in a large frying pan until cooked through
  6. Remove toothpicks before serving

Hello, Tomato!

400g ripe tomatoes | fresh chives & basil| 1 t minced garlic | 4 T virgin olive oil | desired seasonings (opt.)

  1. Quarter tomatoes, then cut each quarter into 4 chunks. Put in bowl garlic
  2. Add herbs, garlic, olive oil and desired seasonings to the bowl. Mix well
  3. Cover the bowl and put in the sun for 1 hour
  4. Serve with cooked pasta

Prawn Pasta

400g spiral pasta | 1 T tomato sauce | 1 T mustard sauce | 2 Italian dressings | 500g uncooked prawn meat | 2/3 basil leaves , chopped | 30g cheese, grated

  1. Cook pasta in boiling water until tender and drain
  2. Mix sauces and dressing in a medium bowl
  3. Lightly spray a pan with cooking spray, heat and add the prawns and basil. Cook until the meat changes pink in colour, stirring all the while
  4. Stir into the sauce and add to the pasta. Reheat and serve with a sprinkling of cheese on top
